- 2 large eggs, whisked with salt and pepper
- 1 cup panko breadcrumbs

- 1/4 cup sweet chili sauce
- 1–2 tablespoons sriracha or hot sauce
- 1 tablespoon fresh lime juice
- 1 clove garlic, minced
- 1 teaspoon sugar (optional)
- 2 stalks green onions, sliced
- 1 tablespoon toasted sesame seeds
- Chopped cilantro (optional)
Instructions
- Thaw frozen shrimp in cold water if necessary, then peel, devein, and pat completely dry with paper towels.
- Set up a breading station with three shallow bowls: one with flour seasoned with salt and pepper, one with whisked eggs, and one with panko breadcrumbs.
- Dredge each shrimp in flour, dip in egg wash, and press firmly into panko breadcrumbs to coat evenly.
- Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and minced garlic in a small bowl to make the Bang Bang sauce.
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Arrange breaded shrimp in a single layer in the air fryer basket, leaving space between pieces.
- Brush or spray the tops of the shrimp lightly with vegetable oil.
- Air fry for 6-8 minutes, flipping halfway through, until shrimp are opaque and coating is golden and crispy.
- Transfer cooked shrimp to a large bowl and toss gently with about half of the Bang Bang sauce.
- Serve immediately on a platter, drizzled with remaining sauce and garnished with green onions and sesame seeds.
Notes
Patting the shrimp dry is crucial for crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. The sauce can be made ahead and refrigerated for up to a week. For extra crunch, sprinkle additional panko on the shrimp after air frying.
