Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large mixing bowl, mash bananas until smooth. Add milk, eggs, maple syrup, and vanilla; whisk to combine.
- Add rolled oats, baking powder, cinnamon, and salt to the wet mixture. Stir until oats are fully coated.
- Fold in diced apples gently, then spread the mixture evenly into the prepared baking dish.
- In a small bowl, combine flour, brown sugar, cinnamon, and nuts (if using). Add cold cubed butter and mix with a pastry cutter or fork until coarse crumbs form.
- Sprinkle the streusel topping evenly over the oatmeal.
- Bake for 40-45 minutes until the top is golden brown and the center is set.
- Let cool for at least 10 minutes before slicing to allow the oatmeal to set.
Notes
Use old-fashioned rolled oats, not quick oats, for the best texture. Ensure butter is cold and cubed for the streusel to achieve a crunchy topping. Let the oatmeal cool for 10 minutes before slicing to prevent it from being mushy. Can be frozen for up to 3 months.
