Description
A high-protein, low-effort breakfast bowl made with just egg whites, turkey bacon, and seasoning. This beginner-friendly recipe is ready in 10 minutes and is perfect for meal prep.
Ingredients
Scale
- 1 cup (240ml) liquid egg whites
- 4–6 strips thick-cut turkey bacon
- Freshly cracked black pepper to taste
- Pinch of kosher salt (optional)
- 1 handful fresh baby spinach (optional)
- 1 tablespoon crumbled feta cheese (optional)
- Few dashes hot sauce (optional)
Instructions
- Cook the turkey bacon in a skillet over medium heat until crispy. Chop into small pieces and set aside on a plate.
- Pour egg whites into a bowl and add black pepper. Whisk with a fork until frothy and slightly yellow.
- Wipe out the skillet or leave a tiny bit of bacon grease. Turn heat to medium-low.
- Pour in the egg whites and let sit for 30 seconds. Gently push eggs from edges to center with a spatula until mostly set but still moist on top.
- Stir in the chopped turkey bacon. If adding spinach, toss it in now to wilt.
- Remove from heat immediately. Residual heat will finish cooking the eggs. Plate and serve.
Notes
Cook on medium-low heat to prevent rubbery texture. Do not overbeat the egg whites. Egg whites continue to cook after removing from heat, so pull them when they look 90% done. This recipe is naturally gluten-free; check turkey bacon labels for sodium/sugar. Do not freeze as texture becomes watery.
