  • ½ cup (100g) light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (2g) ground cinnamon
  • 1 teaspoon (5ml) vanilla extract
  • 1 tablespoon (8g) cornstarch
  • 1 cup (125g) all-purpose flour
  • ½ cup (40g) old-fashioned oats
  • ½ cup (60g) chopped pecans, toasted
  • ½ cup (115g) cold unsalted butter, cubed
  • ½ teaspoon (3g) salt

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish.
  2. Wash, peel (optional), and slice peaches into ½-inch wedges. Remove pits.
  3. In a large bowl, toss peach slices with brown sugar, granulated sugar, lemon juice, cinnamon, vanilla, and cornstarch. Let sit for 10 minutes to draw out juices.
  4. In a separate bowl, combine flour, oats, chopped pecans, brown sugar, and salt.
  5. Cut the cold, cubed butter into the dry ingredients using a fork or pastry cutter until the mixture resembles coarse crumbs with some larger butter pieces.
  6. Pour the peach mixture into the prepared baking dish and spread evenly.
  7. Sprinkle the pecan streusel topping over the peaches, covering as much as possible.
  8. Bake for 35-40 minutes until the streusel is golden brown and the fruit juices are bubbling.
  9. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
  10. Let cool for 10-15 minutes before serving to allow juices to thicken.

Notes
