  • 1 pound smoked sausage (kielbasa or andouille), sliced into half-moon pieces
  • 1.5 pounds red potatoes, cut into 1-inch cubes
  • 1 large yellow onion, chopped
  • 1 large green bell pepper, chopped
  • 1 large red bell pepper, chopped
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt (or to taste)
  • Black pepper (to taste)
  • Optional: 1 cup cherry tomatoes
  • Optional: 1/2 cup crumbled feta cheese
  • Optional: 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a large bowl, combine the cubed potatoes, chopped onions, and chopped bell peppers.
  3. Drizzle with olive oil and sprinkle with oregano, smoked paprika, garlic powder, salt, and pepper. Toss until vegetables are evenly coated.
  4. Spread vegetables in a single layer on the prepared sheet pan, ensuring they are not crowded. Roast for 20 minutes.
  5. While vegetables roast, slice the smoked sausage into half-moon pieces.
  6. Remove the pan from the oven. Add the sliced sausage to the pan and toss everything together to coat the sausage in the oil and spices.
  7. Return to the oven and roast for another 15-20 minutes, until potatoes are fork-tender and sausage is heated through.
  8. Remove from oven. Drizzle with Dijon mustard and sprinkle with minced garlic. Toss one last time and return to oven for 2-3 minutes.
  9. Remove from oven. Top with feta cheese and fresh parsley if desired. Serve immediately.

Notes

Cut vegetables uniformly to ensure even cooking. Do not crowd the pan, as this causes steaming instead of roasting. Add fresh garlic at the end to prevent burning. For extra crispiness, toss potatoes with a little cornstarch before roasting. This recipe does not freeze well due to potato texture changes.
