Description
Fudgy, chewy blondies made with tart raspberries and sweet white chocolate. This easy 5-minute prep dessert requires no mixer and tastes better than takeout.

- 1/2 cup (113g) unsalted butter
- 1 cup (200g) brown sugar
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (170g) white chocolate chips
- 1 cup (150g) fresh or frozen raspberries
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Melt the butter in the microwave in 30-second intervals, stirring until liquid. Let it cool for a minute.
- In a large mixing bowl, whisk the melted butter, brown sugar, and granulated sugar vigorously for about 2 minutes until glossy and smooth.
- Add the egg and vanilla extract, whisking until combined.
- Add the flour, baking powder, and salt. Stir gently with a spatula until just combined. Do not overmix.
- Gently fold in the white chocolate chips and raspberries. If using frozen raspberries, toss them in a tablespoon of flour first to prevent sinking.
- Pour batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes until edges are golden brown and the center looks slightly soft.
- Let cool in the pan for at least 30 minutes before lifting out and cutting into squares.
Notes
Do not overmix the batter to maintain chewiness. Use parchment paper for easy removal. If using frozen raspberries, toss in flour first. Cool completely before cutting for clean slices.
