Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and 1 cup granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  3. Add the vegetable oil, eggs, and vanilla extract. Mix on medium speed until just combined, scraping down the sides of the bowl.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture on low speed. Mix until just combined; do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes (or overnight).
  7. In a small bowl, mix the remaining ½ cup granulated sugar and cinnamon for the coating.
  8. Scoop the dough into 1.5-tablespoon balls. Roll each ball in the cinnamon sugar mixture until fully coated.
  9. Place cookies on baking sheets, about 2 inches apart.
  10. Bake for 9-11 minutes until edges are set and lightly golden, but centers still look soft.
  11. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely.
