- 2 cups (250g) cooked and shredded chicken
- 2 cups (200g) frozen broccoli, thawed and drained
- 1.5 cups (150g) shredded cheddar cheese
- 1 cup (80g) crushed crackers (e.g., Ritz)
- 2 tablespoons melted butter (for topping)
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Cooking spray or butter (for greasing dish)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Thaw frozen broccoli and squeeze out as much water as possible using a towel or colander.
- In a large mixing bowl, combine shredded chicken, drained broccoli, cream of chicken soup, shredded cheddar cheese, garlic powder, and black pepper. Stir until evenly coated.
- Transfer the mixture to the prepared baking dish and spread into an even layer.
- In a small bowl, mix crushed crackers with melted butter. Sprinkle evenly over the casserole and press down gently.
- Bake for 25-30 minutes until the topping is golden brown and the edges are bubbling.
- Let rest for 5 minutes before serving.
Notes
Drain the broccoli thoroughly to prevent a watery casserole. Shred your own cheese for better melting. This dish can be assembled ahead of time (without topping) and refrigerated for up to 24 hours. For a gluten-free version, use gluten-free soup and crackers.
