  • 3 medium bell peppers (any color), sliced into strips
  • 1 large yellow onion, sliced into half-moons

  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Slice the chicken breasts into half-inch thick strips. Slice bell peppers into strips and onion into half-moons.
  2. In a small bowl, mix garlic powder, cumin, chili powder, smoked paprika, salt, and pepper. Toss chicken strips in the spice mix until coated, reserving some spice mix for the vegetables.
  3. Heat oil in a large skillet over medium-high heat. Add chicken in a single layer (cook in batches if necessary) and sear for 3-4 minutes per side until golden brown. Remove chicken to a plate.
  4. In the same skillet, add sliced peppers and onions. Sprinkle with the remaining spice mix. Cook for 5-7 minutes, stirring occasionally, until tender-crisp and slightly charred.
  5. Return the chicken to the skillet with the vegetables. Toss everything together for 1-2 minutes to heat through and meld flavors. Taste and adjust salt if needed.
  6. Serve immediately with warm tortillas and desired toppings like cheese, sour cream, lime, and cilantro.

Notes

Do not crowd the pan to ensure the chicken sears rather than steams. Use high heat for a good sear. Save the browned bits in the pan for extra flavor when cooking the vegetables. Warm tortillas before serving for better texture. Add a squeeze of lime juice at the end to brighten the dish.
