Ingredients

  • 1 cup (240g) pureed pumpkin
  • 1 cup (240ml) water
  • ½ cup (100g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 cup (240ml) strong coffee or espresso
  • 1 cup (240ml) milk (whole, oat, or almond)
  • ½ teaspoon vanilla extract
  • Pumpkin pie spice for topping
  • Whipped cream (optional)

Instructions

  1. In a small saucepan, combine pureed pumpkin, water, sugar, cinnamon, ginger, nutmeg, cloves, and salt. Whisk until smooth and sugar is dissolved.
  2. Heat over medium-low to a gentle simmer. Stir frequently for 5-7 minutes until the mixture thickens slightly. Do not boil.
  3. Remove from heat and let cool for 5 minutes. Strain if a smoother texture is desired, then store in a jar.
  4. Brew strong coffee or espresso while the syrup cools.
  5. Heat milk in a small saucepan over medium-low until steaming (around 150°F/65°C), but not boiling.
  6. Froth the milk using a handheld frother or by shaking warm milk in a mason jar for 30 seconds.
  7. Add 2-3 tablespoons of pumpkin syrup to the bottom of a mug.
  8. Pour in the hot coffee and stir to combine.
  9. Pour the frothed milk over the coffee, spooning foam on top.
  10. Garnish with pumpkin pie spice or cinnamon and whipped cream if desired.

Notes

Make extra pumpkin syrup; it keeps in the fridge for up to two weeks. Use 100% pure pumpkin puree, not pumpkin pie filling. Simmer gently to avoid burning sugar or making spices bitter. Adjust sweetness to taste. For a dairy-free version, use oat milk which froths best.
