  • Author: Eden
  • Total Time: 20 minutes
  • Yield: 8 servings 1x

Description

A rich, spicy, and creamy buffalo chicken dip that is ready in under 30 minutes. Using rotisserie chicken and simple ingredients, this crowd-pleasing appetizer is perfect for game days and parties.

Ingredients

Scale
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) butter, melted
  • 1/2 cup (120ml) hot sauce (e.g., Frank’s RedOriginal)
  • 3 cups (450g) rotisserie chicken, shredded and patted dry
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1/2 cup (120ml) ranch dressing
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/2 cup (50g) extra cheddar cheese for topping
  • 1/4 cup (60ml) blue cheese dressing for drizzling
  • 2 stalks green onions, sliced
  • Celery leaves (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened cream cheese with a hand mixer or fork until smooth and creamy.
  3. Add the melted butter, hot sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Fold in the shredded chicken and shredded cheddar cheese until evenly distributed.
  5. Spread the mixture evenly into a 9×9 inch baking dish.
  6. Bake for 15-20 minutes until the edges are bubbling and the top is golden.
  7. If desired, sprinkle extra cheddar on top and broil for 1-2 minutes for a crispy crust (watch closely).
  8. Remove from oven, drizzle with blue cheese dressing, and garnish with green onions and celery leaves.
  9. Serve immediately while hot.

Notes

Ensure cream cheese is fully softened to avoid lumps. Pat rotisserie chicken dry to prevent a watery dip. Use full-fat dairy for best texture and flavor. Leftovers can be stored in the refrigerator for up to 4 days and reheated gently with a splash of milk.
