  • 1.5 pounds boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil, chopped
  • 8 ounces pasta (fettuccine or penne)

Instructions

  1. Pat chicken breasts dry and season generously with salt and pepper. If thick, slice horizontally to create cutlets.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
  4. Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  5. Add heavy cream, Italian seasoning, and red pepper flakes. Simmer gently for 3-4 minutes until the sauce begins to thicken.
  6. Remove skillet from heat. Stir in grated parmesan cheese until melted and smooth. Taste and adjust seasoning.
  7. Return chicken to the skillet, spooning sauce over it. Simmer for 1-2 minutes to heat through.
  8. Serve chicken and sauce over cooked pasta, garnished with fresh basil and extra parmesan.

Notes

Do not overcrowd the pan when searing chicken to ensure a good crust. Always remove the pan from heat before adding parmesan to prevent a grainy sauce. Reserve pasta water to adjust sauce consistency if needed. This dish does not freeze well due to the dairy content; store leftovers in the fridge for up to 4 days.
