Description
A rich and creamy one-pan weeknight dinner featuring seared chicken breasts in a parmesan-cream sauce with sun-dried tomatoes and spinach. Ready in 30 minutes with minimal cleanup.

- 2 large or 4 small boneless, skinless chicken breasts (about 1.5 lbs / 700g)
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil (for searing)
- 2 tablespoons unsalted butter
- 4–5 cloves fresh garlic, minced
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 1 tablespoon oil from the sun-dried tomato jar
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1 cup grated Parmesan cheese
- 3–4 cups fresh spinach, packed
- 1/2 teaspoon red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Pat chicken breasts dry and pound to 1/2-inch thickness if thick. Mix Italian seasoning, garlic powder, onion powder, salt, and pepper; rub evenly over chicken.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove to a plate and tent with foil.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and red pepper flakes; stir for 30-60 seconds until fragrant.
- Add sun-dried tomatoes and a tablespoon of their oil; sauté for 1 minute.
- Pour in chicken broth and scrape up browned bits from the bottom of the pan. Simmer for 1-2 minutes to reduce slightly.
- Add heavy cream and simmer gently for 3-4 minutes until the sauce thickens slightly.
- Reduce heat to low. Stir in grated Parmesan cheese until melted and smooth.
- Add fresh spinach and stir until wilted (1-2 minutes).
- Return chicken to the skillet, spoon sauce over the top, and let heat through for 1 minute. Adjust seasoning if needed.
- Serve immediately, garnished with fresh basil or parsley.
Notes
Do not crowd the pan when searing chicken to ensure a good crust. Grate your own Parmesan for a smoother sauce. If the sauce is too thin, simmer longer; if too thick, add a splash of broth or milk. This recipe is naturally gluten-free but check labels on sun-dried tomatoes and Parmesan.
