  • Water for boiling
  • 1 tablespoon salt (for boiling water)
  • 2 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Trim the ends of the green beans and rinse them well. Pat dry.
  2. Bring a large pot of salted water to a rolling boil. Add green beans and parboil for 3-4 minutes until bright green and tender-crisp. Drain immediately.
  3. Spread the hot beans on paper towels and pat them thoroughly dry to remove all surface moisture.
  4. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  5. Spread the dried beans in a single layer on the baking sheet. Drizzle with olive oil and toss to coat. Season with salt and pepper.
  6. Roast for 15 minutes, tossing halfway through, until beans start to char slightly.
  7. Remove pan from oven. Sprinkle minced garlic evenly over the hot beans and toss gently.
  8. Sprinkle grated Parmesan cheese over the top. Return to oven and roast for another 5 minutes until cheese is melted and slightly browned.
  9. Remove from oven and let cool for 1-2 minutes. Squeeze fresh lemon juice over the top and toss again.
  10. Serve immediately while hot and crispy.

Do not skip parboiling; it ensures even cooking and removes excess moisture. Dry the beans thoroughly after boiling to ensure crispiness. Add garlic in the last 5 minutes to prevent burning. Use freshly grated Parmesan, as pre-grated cheese contains anti-caking agents that prevent proper melting. For a dairy-free option, substitute Parmesan with nutritional yeast.
