These crispy smashed potatoes with garlic herb butter are the perfect side dish, offering shattered golden edges and a fluffy center. They are easy to make, budget-friendly, and ready in about 40 minutes.

- 2 lbs small red potatoes
- 1 tablespoon salt (for boiling)
- Water (enough to cover potatoes)
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- 2 tablespoons high-smoke point oil (avocado or canola)
- Flaky sea salt (for finishing)
Instructions
- Wash potatoes thoroughly. If any are large, cut them in half. Do not peel.
- Fill a large pot with water to cover potatoes by an inch. Add 1 tablespoon salt and bring to a rolling boil.
- Add potatoes and reduce heat to a steady simmer. Cook for 15-20 minutes until tender. Drain well and let sit for 2 minutes to steam off excess moisture.
- While potatoes boil, melt butter in a small saucepan over low heat or microwave. Stir in minced garlic, parsley, thyme, black pepper, and smoked paprika. Let sit for a minute to infuse.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place a warm potato on the baking sheet. Using the bottom of a sturdy glass (dipped in water), press down firmly to flatten to about ½ inch thick. Repeat with all potatoes, leaving space between them.
- Drizzle oil over potatoes and coat evenly. Sprinkle with salt and pepper.
- Bake for 15-20 minutes until edges are deep golden brown and crispy. Flip halfway through if desired.
- Remove from oven and immediately drizzle with the warm garlic herb butter. Sprinkle with flaky sea salt and serve hot.
Notes
Ensure potatoes are dry after boiling to maximize crispiness. Smash while warm for best results. Do not overcrowd the pan. For extra flavor, add onion powder to the butter. Can be made ahead by boiling and smashing up to 4 hours in advance, storing covered in the fridge.
