Description
An easy, forgiving slow cooker recipe that transforms tough chuck roast into tender, fall-apart beef with a sticky, sweet and savory garlic sauce. Perfect for a low-effort, high-reward dinner that beats takeout.
Ingredients
- 2–3 pounds beef chuck roast, cut into 1-inch cubes
- 2–3 heads broccoli, cut into bite-sized florets
- 6–8 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 teaspoon garlic powder
- 1 teaspoon black pepper, freshly cracked
- 1/2 cup chicken broth
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Optional: Toasted sesame seeds for garnish
- Optional: 1 teaspoon sesame oil for drizzling
Instructions
- Pat the beef chuck roast dry and cut it into 1-inch uniform cubes. Place the beef cubes into the slow cooker.
- In a medium bowl, whisk together the soy sauce, brown sugar, rice vinegar, garlic powder, black pepper, chicken broth, minced garlic, and grated ginger until the sugar is mostly dissolved.
- Pour the sauce mixture over the beef in the slow cooker and toss to coat evenly.
- Cover and cook on LOW for 6-8 hours until the beef is tender.
- About 30 minutes before serving, add the broccoli florets to the slow cooker and stir gently into the beef and sauce.
- In a small bowl, mix the cornstarch and cold water to create a smooth slurry.
- Stir the cornstarch slurry into the slow cooker. Cover and cook for another 15-20 minutes until the sauce thickens and coats the back of a spoon.
- Taste and adjust seasoning if needed. Garnish with toasted sesame seeds and drizzle with sesame oil if desired. Serve over steamed rice or noodles.
Notes
Use low-sodium soy sauce to control salt levels. Do not add broccoli at the beginning or it will turn to mush. Ensure the cornstarch slurry is mixed with cold water to prevent clumping. For a vegetarian version, substitute beef with extra-firm tofu or mushrooms.
