  • 2 medium yellow onions, diced
  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 4 cups low-sodium chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • Salt to taste
  • Optional toppings: 8 slices bacon (cooked and crumbled), sour cream, green onions, dill pickles, yellow mustard

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles. Cook until browned (6-8 minutes), then drain excess fat.
  2. While beef cooks, dice onions and potatoes into 1-inch chunks.
  3. Transfer browned beef to a 6-quart slow cooker. Add diced onions, potato chunks, garlic powder, black pepper, and dried parsley.
  4. Pour in chicken broth and stir gently to combine. Ensure potatoes are mostly submerged.
  5. Cover and cook on LOW for 6-8 hours until potatoes are tender.
  6. About 30 minutes before serving, stir in heavy cream. Gradually add shredded cheddar cheese, stirring constantly until melted and smooth.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Ladle into bowls and top with bacon, sour cream, green onions, and optional dill pickles. Serve immediately.

Notes

Brown the beef first for better flavor. Use Yukon Gold potatoes as they hold their shape better than Russets. Shred your own cheese to prevent graininess. If the soup is too thin, use a cornstarch slurry in the last 30 minutes. This soup does not freeze well due to the dairy; freeze before adding cream and cheese if necessary.
