Instructions

  1. Prep ingredients: Dice the onion, mince the garlic, and measure spices. If using dried mushrooms, soak them in hot water for 10 minutes, then drain (reserve liquid if clear).
  2. Sear the pork chops (optional but recommended): Heat butter in a large skillet over medium-high heat. Pat pork chops dry, season with salt and pepper, and sear for 2-3 minutes per side until golden brown. Remove from skillet.
  3. Layer the slow cooker: Place diced onion at the bottom of a 4-6 quart slow cooker. Place pork chops on top. Sprinkle with dried thyme, garlic powder, salt, and pepper. Scatter drained mushrooms over the top.
  4. Add liquids: In a bowl, whisk together the cream of mushroom soup, beef broth, and heavy cream until smooth. Pour over the pork chops, ensuring they are mostly submerged.
