Description
A refreshing, hydrating 5-minute drink made with fresh cucumber, mint, lime, and sparkling water. It’s a zero-waste, budget-friendly alternative to sugary sodas that tastes like a vacation.
Ingredients
- 1 large English cucumber (about 300g), chopped into rough chunks
- 1 cup fresh mint leaves (about 30g), stems removed
- 2 medium limes, juiced (about 80ml)
- 2–3 tablespoons honey or agave nectar
- 1 cup sparkling water, chilled
- 1 cup ice
- 1 pinch fine sea salt
Instructions
- Wash the cucumber and mint thoroughly. If using a regular cucumber, peel the skin. Chop the cucumber into chunks small enough for your blender. Pick mint leaves off stems and discard stems.
- Add cucumber chunks, mint leaves, lime juice, honey, and a pinch of salt to a blender.
- Add about half a cup of ice to the blender.
- Pulse a few times to break up ingredients, then blend on high for 30-45 seconds until the mixture is completely smooth and bright green with no visible chunks.
- Taste the mixture and adjust sweetness or acidity by adding more honey or lime juice as needed.
- Fill serving glasses with fresh ice.
- Pour the blended cucumber-mint mixture over the ice, filling the glass about 3/4 full.
- Top with sparkling water, which will cause it to froth slightly.
- Stir gently to combine.
- Garnish with a sprig of fresh mint and a lime wheel. Serve immediately.
Notes
For best results, use cold ingredients. Do not blend mint too long to avoid bitterness from stems. If making a batch for a party, blend the base (cucumber, mint, lime, honey) up to 2 days ahead and store in the fridge. Add sparkling water and ice right before serving to maintain fizz. If the drink is too thick, add more sparkling water. If too bitter, peel the cucumber or use less mint.
