  • 4 thick slices sourdough bread (about 300g)
  • 2 large ripe avocados (about 400g)
  • 2 large eggs
  • 2 tablespoons everything bagel seasoning
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon red pepper flakes
  • Flaky sea salt (to taste)
  • Microgreens or fresh herbs (optional garnish)

Instructions

  1. Bring a small pot of water to a boil. Gently lower eggs into the water using a slotted spoon, then reduce heat to a gentle simmer.
  2. Set a timer for 6 minutes for a runny yolk or 7 minutes for a slightly set yolk.
  3. Immediately transfer eggs to a bowl of ice water to stop cooking. Let cool for at least 5 minutes, then peel and slice in half lengthwise.
  4. While eggs boil, toast sourdough slices in a toaster or toaster oven until golden brown and crispy.
  5. Scoop avocado flesh into a small bowl. Add lemon juice, a pinch of salt, and a drizzle of olive oil.
  6. Mash with a fork until creamy but still chunky. Taste and adjust seasoning.
  7. Spread mashed avocado evenly over each slice of toasted bread.
  8. Sprinkle generously with everything bagel seasoning (about 1 tablespoon per slice).
  9. Place one half of a soft-boiled egg on top of each toast slice.
  10. Sprinkle with red pepper flakes and a final pinch of flaky sea salt. Drizzle with a tiny bit more olive oil if desired.
  11. Serve immediately.

Notes

For best results, use ripe but firm avocados. The ice bath is crucial for easy peeling and stopping the cooking process. Do not reheat assembled toast as the bread will become soggy. Avocado mash can be stored separately in the fridge for 1-2 days with plastic wrap pressed directly on the surface to prevent browning.
