Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt, and sugar.
  2. In a separate medium bowl, whisk the buttermilk, egg, melted butter, vanilla extract, and pumpkin puree until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Stop mixing as soon as the flour disappears; small lumps are okay.
  4. In a small bowl, mix the softened butter, maple syrup, cinnamon, and salt for the topping until creamy.
  5. Let the batter rest for 5 minutes while you heat a non-stick skillet or griddle over medium heat.
  6. Lightly grease the pan with butter or oil.
  7. Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and pop, and edges look set.
  8. Flip the pancake and cook for 1-2 minutes until golden brown.
  9. Transfer to a plate and cover loosely with foil to keep warm.
