  • 16 oz (450g) full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons (15g) all-purpose flour
  • 1/4 cup (60g) sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan generously with butter or non-stick spray.
  2. In a medium bowl, mix softened butter, 1/2 cup granulated sugar, flour, 1/2 teaspoon cinnamon, and chopped pecans until it resembles coarse sand. Press firmly into the bottom of the prepared pan.
  3. Par-bake the crust for 10 minutes, then remove from oven.
  4. While the crust bakes, melt 2 tablespoons butter in a large skillet over medium heat. Add diced apples, brown sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla, and cornstarch. Cook for 5-7 minutes until apples are softened and liquid has thickened into a syrup. Remove from heat and let cool slightly.
  5. Spread the caramel apple mixture evenly over the hot par-baked crust.
  6. In a large bowl, beat cream cheese and 1 cup granulated sugar until smooth. Add eggs one at a time, mixing on low speed just until combined. Add 1 teaspoon vanilla, sour cream, and 2 tablespoons flour. Mix until just combined.
  7. Pour the cream cheese mixture over the apple layer and spread evenly.
  8. Bake at 350°F (175°C) for 35-40 minutes until edges are set and slightly golden, but the center still has a slight jiggle.
  9. Cool in the pan on a wire rack for at least 1 hour, then refrigerate for at least 2 hours (preferably overnight) before cutting.
