Description

Ingredients

  • 1 cup (115g) raw unsalted pecan halves
  • 2 tablespoons (25g) light brown sugar
  • 1 tablespoon (14g) unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 1 small pinch salt
  • 6 oz (170g) soft cheese (Brie or Camembert)
  • 4 oz (115g) hard cheese (Manchego or Aged Cheddar)
  • 1 box (approx. 150g) crackers (Water crackers or Rosemary crackers)
  • 1/2 cup (60g) dried fruit (Figs, apricots, or cranberries)
  • 1/2 cup (75g) fresh fruit (Grapes or apple slices)
  • 2 tablespoons (30ml) honey
  • Optional: Pickles, olives, dark chocolate squares, or pretzel bites

Instructions

  1. Prep ingredients: Slice hard cheese into wedges or cubes, halve grapes or slice apples, and open crackers.
  2. In a small saucepan over medium-low heat, melt the butter until foamy.
  3. Add brown sugar, cinnamon, and salt to the butter. Stir constantly until the sugar dissolves and forms a thick, glossy syrup (about 2-3 minutes).
  4. Remove from heat and add pecans, stirring quickly to coat evenly.
  5. Pour pecans onto a parchment-lined plate in a single layer. Let cool for 5-7 minutes until hardened.
  6. Place the soft cheese (Brie) in the center of a wooden board or platter.
  7. Arrange hard cheese wedges around the soft cheese.
  8. Fan out or stack crackers on the board.
  9. Tuck dried fruit into empty spaces on the board.
  10. Scatter fresh fruit around the edges.
  11. Drizzle honey over the cheeses and fruit in a zigzag pattern.
  12. Once pecans are cool and crunchy, scatter them over the top of the board.
  13. Serve immediately at room temperature.

Notes

Let cheese come to room temperature 30 minutes before serving for best flavor. Do not overcrowd the board; leave space for an elegant look. Drizzle honey last to prevent crackers from getting soggy. If pecans stick together, break them apart gently while warm or once cool.
