A one-pan, beginner-friendly dinner featuring juicy chicken breasts and crisp apples in a glossy, sweet-and-savory apple cider and thyme glaze.

- 2 large or 4 small boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 2 medium apples (Granny Smith or Honeycrisp), sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 cup unsweetened apple cider
- 1 tablespoon apple butter or jam
- 2 tablespoons unsalted butter, cold
Instructions
- Pat chicken breasts dry and pound to even 1/2-inch thickness. Season generously with salt and pepper, then dust lightly with flour, shaking off excess.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken to a plate.
- Reduce heat to medium. Add sliced apples to the skillet and cook for 2-3 minutes until softened and golden. Push apples to the side.
- Add garlic and thyme to the empty side of the pan; cook for 30 seconds until fragrant. Pour in apple cider and apple butter, scraping up browned bits. Simmer for 2-3 minutes until syrupy.
- Nestle chicken back into the skillet on top of apples. Spoon glaze over chicken. Cover and simmer on low-medium heat for 4-5 minutes until chicken reaches 165°F internally.
- Remove lid. If excess liquid remains, boil for 1 minute to thicken. Remove from heat and stir in cold butter until melted and glossy. Serve immediately.
Notes
Pound chicken to even thickness for uniform cooking. Use real apple cider, not juice, for better flavor. Finish with cold butter to emulsify the sauce. Do not overcrowd the pan to ensure proper searing. This recipe does not freeze well.
