Description

  • 2 pounds boneless, skinless chicken thighs
  • 4 cups low-sodium chicken broth
  • 1 large yellow onion, diced
  • 3 medium carrots, chopped
  • 3 stalks celery, chopped
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 2 tablespoons dried chives or green onion, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Chop onion, carrots, and celery into bite-sized pieces.
  2. Add chicken, onion, carrots, celery, thyme, parsley, salt, and pepper to the slow cooker.
  3. Pour in chicken broth and stir gently to distribute herbs.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  5. While stew cooks, whisk together flour, baking powder, and salt in a medium bowl.
  6. Cut cold butter into the flour mixture until it resembles coarse crumbs with pea-sized butter pieces.
  7. Stir in buttermilk, chives, and Parmesan until just combined; do not overmix.
  8. Remove slow cooker lid, stir in heavy cream and frozen peas, and let sit on HIGH for 10 minutes.
  9. Preheat oven to 375°F (190°C).
  10. Drop large spoonfuls of biscuit dough onto the surface of the stew.
  11. Bake for 18-20 minutes until biscuits are golden brown and cooked through.
  12. Let rest for 5 minutes before serving.

Notes

Use low-sodium broth to control saltiness. Ensure baking powder is fresh for fluffy biscuits. Do not overmix the dough. If the stew is too thin, mash some vegetables or use a cornstarch slurry. Dumplings do not freeze well; freeze the stew base separately.
