Ingredients

  • 1 pound mild or hot Italian sausage (casings removed)
  • 1 medium yellow onion, diced
  • 45 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 can (13.5 oz / 400ml) full-fat unsweetened coconut milk
  • 2 cups low-sodium chicken broth
  • 2 large bunches kale, stems removed and chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Chop onion, mince garlic, and chop kale into bite-sized pieces.
  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
  3. Add Italian sausage, breaking it up with a wooden spoon. Cook until browned and cooked through (5-7 minutes). Do not drain the fat.
  4. Reduce heat to medium. Add diced onion and cook for 2-3 minutes until translucent.
  5. Add minced garlic and red pepper flakes. Cook for 1 minute until fragrant, stirring constantly.
  6. Pour in chicken broth, scraping the bottom of the pot to release browned bits. Bring to a gentle simmer.
  7. Stir in coconut milk, oregano, and basil. Simmer for 5 minutes to meld flavors.
  8. Add chopped kale, pushing it into the broth. Cook for 3-4 minutes until wilted and tender but still vibrant green.
  9. Taste and adjust seasoning with salt and pepper. Serve hot, optionally topped with olive oil or fresh parsley.

Notes

Use full-fat coconut milk for the best creamy texture; light coconut milk will make the soup watery. Do not overcook the kale to prevent it from becoming slimy. If the soup is too salty, use low-sodium broth. This soup does not freeze well due to the coconut milk texture changing upon thawing. Store leftovers in the refrigerator for up to 4 days.
