A quick and easy weeknight dinner featuring juicy bone-in pork chops and roasted apples tossed in a sweet and savory maple-Dijon glaze, all cooked on a single sheet pan.

- 4–6 bone-in center-cut pork chops (about 1 inch thick, 1.5 lbs / 680g)
- 3 tablespoons real maple syrup (Grade B preferred)
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 medium apples (Honeycrisp or Gala), sliced into wedges
- 1 medium red onion, cut into wedges
- Optional: Brussels sprouts or butternut squash cubes
- Fresh parsley or chives, chopped (for garnish)
- Toasted pecans (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
- In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, olive oil, salt, and black pepper until smooth.
- Slice apples and red onion. Toss vegetables with a drizzle of olive oil and a pinch of salt.
- Spread vegetables in a single layer on the prepared baking sheet. Place pork chops on top.
- Brush pork chops generously with half of the glaze. Drizzle remaining glaze over vegetables.
- Roast for 15 minutes.
- Remove pan from oven. Flip pork chops and brush with remaining glaze. Toss vegetables to redistribute sauce.
- Return to oven and roast for another 10-15 minutes, or until pork reaches an internal temperature of 145°F (63°C).
- Remove from oven and let pork chops rest for 5 minutes before serving.
- Garnish with fresh herbs or toasted pecans if desired.
Notes
Pat pork chops dry before seasoning to ensure browning. Use a meat thermometer to avoid overcooking; pull pork at 145°F. If using root vegetables, add them earlier as they take longer to cook. Do not overcrowd the pan to prevent steaming.
