Ingredients
- 1.5 lbs Smoked Sausage (Andouille or kielbasa), sliced into half-moons
- 2 large Sweet Potatoes, peeled and cut into 1-inch cubes
- 1 lb Brussels Sprouts, halved
- 1 large Red Onion, cut into thick wedges
- 2 large Apples (Honeycrisp or Fuji), diced
- 3 tablespoons Olive Oil
- 1 teaspoon Smoked Paprika
- 1 teaspoon Dried Thyme
- 1 teaspoon Garlic Powder
- Salt and Black Pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Chop sweet potatoes into 1-inch cubes, halve Brussels sprouts, cut red onion into wedges, and dice apples.
- In a large mixing bowl, toss sweet potatoes, Brussels sprouts, and onions with olive oil, smoked paprika, thyme, garlic powder, salt, and pepper until evenly coated.
- Gently toss in the diced apples.
- Spread vegetables in a single layer on sheet pans, ensuring they are not overcrowded.
- Roast vegetables for 20 minutes, shaking or stirring halfway through to ensure even browning.
- While vegetables roast, slice the smoked sausage.
- Push roasted vegetables to the sides of the pan and add sausage slices to the empty space.
- Return to oven and roast for another 10-15 minutes until sausage is browned and vegetables are tender.
- Remove from oven and let cool on the counter for 10 minutes to prevent condensation.
- Divide the mixture evenly into meal prep containers.

Do not overcrowd the pan as this causes steaming instead of roasting. Ensure vegetables are cut uniformly for even cooking. Cool food completely before storing to maintain texture and safety. Sausage should be added later in the cooking process to prevent drying out.
