  • 1 tablespoon lemon juice
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon freshly grated nutmeg
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup granulated sugar
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup unsalted butter, cold and cubed
  • Pinch of flaky sea salt
  • Vanilla ice cream or whipped cream, for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss sliced pears with lemon juice, brown sugar, cinnamon, ginger, and nutmeg. Let sit for 10 minutes to draw out juices.
  3. In a separate bowl, combine flour, rolled oats, granulated sugar, and chopped nuts.
  4. Add cold, cubed butter to the dry mixture. Use fingers, a fork, or a pastry cutter to mix until the texture resembles coarse crumbs with pea-sized butter clumps.
  5. Pour the spiced pears into a 9×9 inch baking dish and spread evenly.
  6. Scatter the topping mixture over the pears. Do not press down. Sprinkle with flaky sea salt.
  7. Place the baking dish on a rimmed baking sheet to catch any bubbling juices.
  8. Bake for 40-45 minutes, or until the topping is golden brown and juices are bubbling. Tent with foil if browning too quickly after 30 minutes.
  9. Let cool for at least 15 minutes before serving to allow juices to thicken.
  10. Serve warm with vanilla ice cream or whipped cream.
