Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup mini muffin tin with paper liners or grease thoroughly with butter or cooking spray.
  2. In a medium bowl, crack the 12 eggs. Add milk, baking powder, salt, and pepper. Whisk vigorously for 30-60 seconds until pale and frothy to incorporate air.
  3. Stir in the shredded cheese and any chosen mix-ins (ensure veggies are cooked and drained).
  4. Divide the mixture evenly among the 12 muffin cups, filling each about 3/4 full. Smooth the tops.
