Description
A spicy, creamy, and budget-friendly buffalo chicken dip made with just a few cheap staples. Ready in 15 minutes, this crowd-pleaser is perfect for game day and costs under $10 to make.
Ingredients
Scale
- 8 oz block cream cheese (do not use whipped)
- 2 cups shredded chicken
- ½ cup Frank’s RedHot sauce
- 2 tablespoons butter
- 1 packet ranch dressing mix (or 1 tsp dried ranch seasoning)
- ½ teaspoon garlic powder
- 1 cup shredded cheddar cheese (optional)
- ¼ cup blue cheese dressing (optional)
- Celery sticks and tortilla chips for serving
Instructions
- Shred the chicken using two forks or pull meat from rotisserie chicken bones. Set aside.
- Heat a skillet over medium-low heat and melt the butter.
- Add the block of cream cheese to the melted butter, breaking it into chunks. Stir constantly until smooth and creamy.
- Stir in the ranch dressing mix, garlic powder, and hot sauce until combined.
- Add the shredded chicken (and optional cheddar cheese) to the skillet, stirring to distribute evenly.
- Simmer gently for 2-3 minutes until the dip is hot all the way through and has a creamy consistency.
- Transfer to a serving bowl and serve with celery sticks and tortilla chips.
Notes
Keep heat on medium-low to prevent cream cheese from separating. If the dip is too thick, add a splash of milk. If too runny, simmer longer. For a lighter version, substitute half the cream cheese with Greek yogurt. This dip does not freeze well due to dairy separation.
