Fresh Strawberry Buttermilk Sheet Cake

  • Author: Eden
  • Total Time: 55 minutes
  • Yield: 12 servings 1x

Description

A simple, moist, and tangy 5-ingredient sheet cake made with buttermilk and fresh strawberries. No mixer required, this easy dessert is perfect for weeknights or potlucks.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 1 cup (240ml) buttermilk
  • 1 pint (450g) fresh strawberries, hulled and chopped into ½-inch pieces
  • 1 cup (120g) powdered sugar (for glaze)
  • 12 tablespoons milk or cream (for glaze)
  • Extra strawberries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the flour and sugar until combined and free of lumps.
  3. Pour in the melted butter and buttermilk. Whisk until just combined. The batter will be thick and slightly lumpy; do not overmix.
  4. Gently fold the chopped strawberries into the batter using a spatula, distributing them evenly.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with moist crumbs.
  7. Let the cake cool in the pan for 10 minutes.
  8. While cooling, whisk powdered sugar with 1 tablespoon of milk to create a drizzle-able glaze. Add more milk or sugar as needed for consistency.
  9. Drizzle the glaze over the cooled (or slightly warm) cake.
  10. Top with fresh strawberry slices if desired, cut into squares, and serve.

Notes

Do not overmix the batter to ensure a tender crumb. If using frozen strawberries, thaw and pat dry before adding to prevent soggy batter. For a gluten-free version, use a 1:1 gluten-free flour blend. The cake tastes better the next day as flavors meld.
