- 1 cup (200g) granulated sugar
- ½ cup (115g) unsalted butter, melted
- 1 cup (240ml) buttermilk
- 1 pint (450g) fresh strawberries, hulled and chopped into ½-inch pieces
- 1 cup (120g) powdered sugar (for glaze)
- 1–2 tablespoons milk or cream (for glaze)
- Extra strawberries for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly with butter or non-stick spray.
- In a large mixing bowl, whisk together the flour and sugar until combined and free of lumps.
- Pour in the melted butter and buttermilk. Whisk until just combined. The batter will be thick and slightly lumpy; do not overmix.
- Gently fold the chopped strawberries into the batter using a spatula, distributing them evenly.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with moist crumbs.
- Let the cake cool in the pan for 10 minutes.
- While cooling, whisk powdered sugar with 1 tablespoon of milk to create a drizzle-able glaze. Add more milk or sugar as needed for consistency.
- Drizzle the glaze over the cooled (or slightly warm) cake.
- Top with fresh strawberry slices if desired, cut into squares, and serve.
Notes
Do not overmix the batter to ensure a tender crumb. If using frozen strawberries, thaw and pat dry before adding to prevent soggy batter. For a gluten-free version, use a 1:1 gluten-free flour blend. The cake tastes better the next day as flavors meld.
