Description

A no-cook, healthy, and customizable frozen snack made with Greek yogurt, honey, granola, and various toppings. Perfect for busy mornings and lunchboxes.


Ingredients

  • 2 cups plain Greek yogurt (full-fat recommended)
  • 3 tablespoons honey
  • 1.5 cups granola (with clusters)
  • 1 cup mixed berries (fresh or frozen)
  • ½ cup dark chocolate chips
  • ½ cup chopped nuts (walnuts, almonds, or pecans)
  • ¼ cup unsweetened coconut flakes

Instructions

  1. Line a standard 13×18 inch baking sheet with parchment paper.
  2. In a medium bowl, combine the Greek yogurt and honey. Stir until the honey is fully dissolved and the mixture is smooth.
  3. Pour the yogurt mixture onto the lined baking sheet. Use a silicone spatula to spread it into an even layer, approximately ¼ inch thick.
  4. Immediately sprinkle the granola over the yogurt, pressing it down gently so the clusters adhere to the yogurt.
  5. Scatter the mixed berries, dark chocolate chips, chopped nuts, and coconut flakes evenly over the top. Press larger items slightly into the yogurt.
  6. Place the baking sheet in the freezer for at least 3-4 hours, or until the yogurt is completely solid.
  7. Once frozen, lift the parchment paper out of the pan. Break the bark into pieces by hand or use a knife to snap it into shards.
  8. Store in an airtight container or ziplock bags in the freezer for up to 2 weeks.

Notes

Use full-fat Greek yogurt for a creamy texture; low-fat yogurt can result in icy bark. Work quickly when adding toppings as the yogurt sets fast. If the bark is too brittle, spread it slightly thicker next time. If toppings fall off, ensure you press them into the yogurt. For nut allergies, substitute nuts with pumpkin seeds or sunflower seeds. For dairy-free/vegan options, use coconut yogurt and maple syrup/agave.
