- 1 cup (175g) dark chocolate chips (semi-sweet or bittersweet)
- ½ cup (115g) unsalted butter
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- ¾ cup (95g) all-purpose flour
- 1 teaspoon mint extract (pure peppermint or spearmint)
- ¼ teaspoon salt
- 2 tablespoons fresh mint leaves, finely chopped (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
- In a medium saucepan over low heat, melt the butter and chocolate chips together, stirring constantly until smooth. Remove from heat and let cool for 2 minutes.
- Whisk the sugar into the melted chocolate mixture until combined. Add eggs one at a time, whisking well after each addition. Stir in the mint extract and salt.
- Sprinkle the flour over the wet mixture and gently fold it in with a spatula until just incorporated. Do not overmix.
- Fold in the fresh mint leaves if using.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until the top is cracked and shiny and a toothpick inserted into the center comes out with moist crumbs attached.
- Let the brownies cool in the pan for at least 30 minutes before lifting them out and cutting into squares.
Notes
Do not overmix the flour to maintain a fudgy texture. Use good quality chocolate for the best flavor. Brownies taste better the next day as flavors meld. They can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
