  • ½ cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • ¾ cup (95g) all-purpose flour
  • 1 teaspoon mint extract (pure peppermint or spearmint)
  • ¼ teaspoon salt
  • 2 tablespoons fresh mint leaves, finely chopped (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan and line it with parchment paper, leaving an overhang on the sides.
  2. In a medium saucepan over low heat, melt the butter and chocolate chips together, stirring constantly until smooth. Remove from heat and let cool for 2 minutes.
  3. Whisk the sugar into the melted chocolate mixture until combined. Add eggs one at a time, whisking well after each addition. Stir in the mint extract and salt.
  4. Sprinkle the flour over the wet mixture and gently fold it in with a spatula until just incorporated. Do not overmix.
  5. Fold in the fresh mint leaves if using.
