Ingredients
- 2 cups fresh spinach (packed, about 60g)
- 1 cup frozen pineapple chunks (about 150g)
- 1 cup coconut water (240ml)
- 1/2 cup ice cubes (about 60g)
- 1 teaspoon lemon juice (about 5ml)
Instructions
- Wash the fresh spinach thoroughly to remove any grit.
- Pour the coconut water into the blender first to help the blades spin freely.
- Add the spinach, frozen pineapple chunks, lemon juice, and ice cubes to the blender.
- Blend on low speed initially, then gradually increase to high speed.
- Blend for 30-60 seconds until the mixture is completely smooth and vibrant green.
- Taste and adjust sweetness or tartness if desired.
- Pour into a glass and serve immediately to prevent oxidation.

For the best texture, use frozen pineapple chunks rather than fresh pineapple with ice to avoid a watery consistency. Lemon juice helps stabilize the green color and prevents oxidation.
