- 1 pound ground beef (80/20 fat ratio)
- 1 medium yellow onion, diced
- 8 ounces cremini or white button mushrooms, sliced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup full-fat sour cream
- 1/2 cup beef broth (low-sodium)
- 8 ounces egg noodles
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- Butter or olive oil for cooking (optional)
Instructions
- Prep ingredients by dicing the onion and slicing the mushrooms. Measure out the sour cream and broth.
- Bring a large pot of salted water to a boil. Add egg noodles and cook according to package directions until al dente. Before draining, reserve 1/2 cup of pasta water. Drain pasta and toss with a little butter to prevent sticking.
- While noodles cook, heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned and no pink remains (5-7 minutes). Drain excess grease if necessary, but leave some for flavor.
- Add the diced onion to the beef and cook for 2 minutes until softened. Add the sliced mushrooms and cook for 2-3 minutes until they release moisture and start to brown.
- Reduce heat to medium-low. Pour in the cream of mushroom soup and beef broth. Stir to combine and simmer for 2-3 minutes until the sauce bubbles and thickens slightly.
- Remove the skillet from the heat. Gradually add the sour cream while stirring constantly until the sauce is smooth and creamy. If too thick, add a splash of reserved pasta water. If too thin, let it sit for a minute to thicken.
- Return skillet to low heat for 1 minute to warm through. Taste and add salt and pepper as needed. Serve immediately over cooked egg noodles, topped with fresh parsley.
Notes
Do not skip reserving pasta water; it helps thin the sauce if needed. Always remove the pan from heat before adding sour cream to prevent it from separating. For a richer sauce, swirl in a tablespoon of cold butter at the end. This recipe does not freeze well due to the dairy content.
