High-Protein Chocolate Peanut Butter Overnight Oats

  • Author: Eden
  • Total Time: 6 hours 5 minutes
  • Yield: 1 serving 1x

Description

A creamy, single-serve breakfast that tastes like a chocolate milkshake but provides 25 grams of protein. No cooking required, just mix the night before and enjoy a stress-free, satisfying morning meal.

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup unsweetened almond milk (or preferred milk)
  • 1/2 cup plain Greek yogurt
  • 1 scoop chocolate protein powder
  • 2 tablespoons natural creamy peanut butter
  • 1 tablespoon dark cocoa powder
  • 12 teaspoons maple syrup or honey (optional)
  • 1 teaspoon chia seeds
  • A tiny pinch of sea salt

Instructions

  1. In a 4-ounce mason jar, combine the milk, Greek yogurt, peanut butter, maple syrup, and salt. Stir vigorously with a fork or small whisk until the peanut butter and yogurt are mostly dissolved.
  2. Add the rolled oats, cocoa powder, chia seeds, and protein powder on top of the wet mixture.
  3. Stir everything together thoroughly, scraping the sides of the jar to ensure all ingredients are fully incorporated and no clumps of protein powder remain. The mixture should resemble a thick chocolate batter.
  4. Place the lid on the jar and refrigerate for at least 6-8 hours (overnight is best).
  5. In the morning, give the oats a good stir. If the mixture is too thick, add a splash of milk and stir again.
  6. Serve cold, straight from the jar, optionally topped with extra peanut butter, berries, or banana slices.

Notes

Do not use quick oats as they turn to mush; use old-fashioned rolled oats. If using natural peanut butter, stir the jar before measuring to incorporate the oil. Whisk protein powder into the liquid first to prevent clumping. Salt is crucial to enhance the chocolate flavor. Can be stored in the fridge for up to 5 days.
