Silky, protein-packed breakfast bites made with cottage cheese, eggs, spinach, and feta. Ready in 20 minutes and perfect for meal prep.
Ingredients

- 1 cup (225g) full-fat small-curd cottage cheese
- 4 large eggs
- ½ cup (70g) crumbled feta cheese
- 1 cup (30g) packed fresh spinach
- 2 tablespoons (30ml) heavy cream
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Non-stick cooking spray
Instructions
- Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick spray or line with silicone liners.
- Add cottage cheese and eggs to a blender. Blend on high for 30-60 seconds until completely smooth and creamy.
- Add heavy cream, feta cheese, spinach, dried oregano, garlic powder, salt, and black pepper to the blender. Pulse a few times just to combine.
- Pour the mixture evenly into the prepared muffin cups, filling each about ¾ full.
- Bake for 18-20 minutes until set in the center and slightly puffed.
- Let cool in the pan for 5 minutes before removing.
Notes
Blend cottage cheese until completely smooth to avoid curds. Do not overfill muffin cups as eggs puff up during baking. For extra creaminess, add 1 tablespoon of cream cheese. If using frozen spinach, thaw and squeeze out all water.
