Ingredients
- 1 cup sharp cheddar cheese, finely grated (about 115g)
- 1 ½ cups all-purpose flour (about 190g)
- ½ cup unsalted butter, cold and cubed (115g)
- 2–4 tablespoons ice water
- ½ teaspoon garlic powder
- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper, freshly cracked
- Flaky sea salt, for topping (optional)
- Extra grated cheese, for topping (optional)
- Extra dried herbs, for topping (optional)
Instructions
- Grate the cheddar cheese finely and cube the cold butter into small pieces.
- In a large bowl, whisk together the flour, garlic powder, oregano, salt, and black pepper.
- Add the cold butter cubes to the flour mixture and cut them in using a fork or pastry cutter until the texture is coarse and sandy with pea-sized bits of butter remaining.
- Stir in the grated cheddar cheese, then add ice water one tablespoon at a time, mixing gently until the dough just comes together and looks shaggy.
- Place the dough ball between two sheets of parchment paper and roll it out to about ⅛-inch thickness.
- Score the dough into squares or rectangles with a pizza cutter or sharp knife without cutting all the way through.
- Sprinkle with flaky sea salt and extra cheese if desired.
- Bake at 375°F (190°C) for 12-15 minutes, or until the edges are golden brown.
- Let the crackers cool on the pan for 5 minutes, then transfer to a wire rack to cool completely until crisp.
Notes
Keep all ingredients cold to ensure flaky layers. Do not overmix the dough to avoid tough crackers. Pre-shredded cheese contains anti-caking agents that can make the dough sticky; always grate cheese from a block. Crackers will soften when hot but crisp up as they cool completely. Store in an airtight container at room temperature for up to one week.
