  • 1 cup (240g) 100% Pure Pumpkin Puree
  • ½ cup (100g) Light Brown Sugar
  • ½ cup (120ml) Water
  • 2 tablespoons (30ml) Heavy Cream
  • 2 teaspoons Pumpkin Pie Spice
  • 1 teaspoon Ground Cinnamon
  • 1 cup (240ml) Strong Brewed Coffee or 2 shots Espresso
  • 1 cup (240ml) Milk (Whole, Oat, Almond, or Soy)
  • ½ teaspoon Pure Vanilla Extract
  • A pinch of Salt
  • Whipped Cream (Optional, for topping)
  • Extra Pumpkin Spice (For garnish)

Instructions

  1. In a small saucepan, combine pumpkin puree, brown sugar, water, and heavy cream. Whisk until smooth.
  2. Add pumpkin pie spice, extra cinnamon, vanilla extract, and salt. Whisk to combine.
  3. Place saucepan over medium-low heat and stir constantly for 3-4 minutes until the mixture thickens slightly and coats the back of a spoon. Remove from heat immediately.
  4. While the syrup simmers, brew strong coffee or pull espresso shots and pour into a mug.
  5. Heat milk in a microwave-safe mug or saucepan until steaming hot (do not boil). Froth if desired.
  6. Add 2-3 tablespoons of warm pumpkin syrup to the coffee and stir well.
  7. Pour the hot milk over the coffee.
  8. Top with whipped cream and a dusting of extra pumpkin spice. Serve immediately.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Keep heat low to prevent burning the pumpkin. The syrup can be stored in an airtight jar in the fridge for up to two weeks. For a dairy-free version, use coconut cream in the syrup and oat or almond milk for the latte.
