- 1 cup (120g) medium-grind yellow cornmeal
- 1 cup (125g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 2 tablespoons sugar
- 1 cup (240ml) buttermilk
- 2 large eggs, room temperature
- 1/4 cup (57g) melted unsalted butter
- 4 tablespoons (57g) unsalted butter (for skillet)
- 3 tablespoons honey (for baste)
- Extra honey for serving
Instructions
- Preheat oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to heat up.
- In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.
- Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
- Carefully remove hot skillet from oven. Add 4 tablespoons butter and let it melt and sizzle for 30 seconds.
- Pour batter into the skillet. It will sizzle loudly.
- Bake for 15-18 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
- While baking, mix 3 tablespoons honey with melted butter (if not already melted).
- Immediately upon removing from oven, brush the honey butter mixture all over the top.
- Let cool in the skillet for 5-10 minutes before slicing into wedges and serving warm.
Notes
Ensure the skillet is hot before adding batter to create a crispy crust. Do not overmix the batter to avoid a dense texture. Buttermilk is essential for tenderness; substitute with milk plus lemon juice if necessary. Cornbread can be frozen for up to 3 months.
