  • 1 cup (120g) medium-grind yellow cornmeal
  • 1 cup (125g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 2 tablespoons sugar
  • 1 cup (240ml) buttermilk
  • 2 large eggs, room temperature
  • 1/4 cup (57g) melted unsalted butter
  • 4 tablespoons (57g) unsalted butter (for skillet)
  • 3 tablespoons honey (for baste)
  • Extra honey for serving

Instructions

  1. Preheat oven to 400°F (200°C). Place a 10-inch cast iron skillet in the oven to heat up.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
  5. Carefully remove hot skillet from oven. Add 4 tablespoons butter and let it melt and sizzle for 30 seconds.
  6. Pour batter into the skillet. It will sizzle loudly.
  7. Bake for 15-18 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. While baking, mix 3 tablespoons honey with melted butter (if not already melted).
  9. Immediately upon removing from oven, brush the honey butter mixture all over the top.
  10. Let cool in the skillet for 5-10 minutes before slicing into wedges and serving warm.

Notes

Ensure the skillet is hot before adding batter to create a crispy crust. Do not overmix the batter to avoid a dense texture. Buttermilk is essential for tenderness; substitute with milk plus lemon juice if necessary. Cornbread can be frozen for up to 3 months.
