- 1 pound flank steak or sirloin, cut into thin strips against the grain
- 2 tablespoons soy sauce (low-sodium recommended)
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 tablespoon fresh ginger, grated
- 4 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1/2 cup water or beef broth
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
- 4 cups broccoli florets, cut into uniform sizes
- 2 green onions, sliced
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Slice the flank steak into thin strips against the grain. Toss with soy sauce and 1 tablespoon cornstarch in a bowl. Let sit for 10 minutes.
- Set Instant Pot to ‘Sauté’ mode. Add vegetable oil. Once hot, sear beef in a single layer (in batches if needed) for 2-3 minutes until browned. Remove beef and set aside.
- In a small bowl, whisk together grated ginger, minced garlic, honey, rice vinegar, water (or beef broth), and remaining soy sauce.
- Add broccoli florets to the Instant Pot. Pour the sauce mixture over the broccoli and stir. Place the seared beef on top of the broccoli.
- Close the lid, set valve to ‘Sealing,’ and cook on High Pressure for 2 minutes.
- Perform a Quick Release immediately. Open the lid. Stir the beef into the sauce.
- Pour in the cornstarch slurry. Set Instant Pot back to ‘Sauté’ mode and cook for 1-2 minutes, stirring constantly, until the sauce thickens and becomes glossy.
- Taste and adjust seasoning. Serve immediately over steamed rice, topped with green onions and red pepper flakes.
Notes
Use winter broccoli for best texture and flavor. Slice beef against the grain for tenderness. Do not skip searing the beef for better flavor. Always use Quick Release to keep broccoli crisp-tender. This recipe does not freeze well due to broccoli texture.
