Ingredients
- 1/4 cup (25g) super-fine blanched almond flour
- 2 tablespoons (30g) sugar-free chocolate chips (e.g., Lily’s brand)
- 2 tablespoons (30g) unsalted butter, cubed
- 1 large egg, room temperature
- 1/4 teaspoon almond extract (optional)
- 2 tablespoons (20g) granulated keto sweetener (erythritol or monk fruit blend)
- 1 pinch salt
- 2 tablespoons heavy cream (for topping, optional)
- 1 teaspoon crushed pecans (for topping, optional)
Instructions
- Spray a 12-ounce microwave-safe mug with cooking spray or rub with a little butter to prevent sticking.
- In a small microwave-safe bowl, combine butter and chocolate chips. Microwave on high for 30 seconds, stir, then microwave for another 15 seconds if needed until smooth and glossy.
- In a separate small bowl, whisk together almond flour, sweetener, salt, and almond extract until no lumps remain.
- Pour the melted chocolate and butter mixture into the dry ingredients. Add the room temperature egg and mix vigorously with a fork until the batter is smooth, thick, and uniform.
- Push a few extra chocolate chips or a dollop of sugar-free chocolate hazelnut spread into the center of the batter in the mug to create a molten core.
- Microwave the mug on high for 60 to 90 seconds. Start with 60 seconds; the edges should be set but the center should still look slightly wet and jiggly. Adjust time based on microwave power.
- Let the cake sit for 1-2 minutes to set slightly. Top with whipped cream or pecans if desired, and serve immediately.

Do not overmix the batter to avoid a dense texture. Room temperature eggs help keep the batter smooth. If using a powerful microwave (1000+ watts), start with 45 seconds.
