Description

These Keto Coconut Almond Fat Bombs are a quick, low-carb snack featuring a creamy almond and coconut oil center coated in a crisp dark chocolate shell. Perfect for satisfying sweet cravings while staying in ketosis.


Ingredients

  • 1 cup (100g) raw blanched unsweetened almonds
  • 1/2 cup (120ml) unsweetened coconut oil
  • 1/4 cup (60g) natural almond butter
  • 34 tablespoons (30-40g) sugar-free sweetener (erythritol or monk fruit)
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 1 cup (170g) dark chocolate chips (70% cocoa or higher)
  • 1 tablespoon (15ml) coconut oil (for chocolate shell)
  • Optional: Sea salt flakes for topping

Instructions

  1. Pulse almonds in a food processor until they form a fine meal, being careful not to over-process into butter.
  2. Add melted coconut oil, almond butter, sweetener, vanilla, and salt to the almond meal. Pulse until the mixture resembles wet sand.
  3. Scoop the mixture into silicone molds, pressing firmly to remove air pockets. Fill about 3/4 full.
  4. Freeze the molds for 10-15 minutes until the centers are firm.
  5. While centers freeze, melt dark chocolate chips and 1 tablespoon coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each.
  6. Remove molds from freezer and dip each bomb into the melted chocolate, coating completely.
  7. Tap off excess chocolate and place back on a tray or in the mold.
  8. Immediately sprinkle with sea salt flakes if using.
  9. Freeze for another 10-15 minutes until the chocolate shell is hard.
  10. Store in an airtight container in the freezer for up to 3 months.

Notes

Ensure the center is fully frozen before dipping to prevent the chocolate shell from sliding off. Use room temperature coconut oil and almond butter for best mixing results. If the chocolate is too thick, add more coconut oil. If the center is too soft, freeze longer before dipping.
