Description
A quick, moist, and delicious keto-friendly pumpkin spice mug cake that rises perfectly and tastes like autumn. Made with almond flour and real pumpkin puree, this low-carb dessert is ready in just 5 minutes.
Ingredients
Scale
- 1/2 cup (50g) fine-ground blanched almond flour
- 2 tablespoons (30g) pure pumpkin puree
- 1 large egg
- 2 tablespoons (30g) melted butter
- 2 tablespoons (20g) granulated keto sweetener (erythritol or monk fruit blend)
- 1/2 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1 tablespoon sugar-free chocolate chips (optional)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Lightly grease a 12-ounce microwave-safe mug with butter or cooking spray.
- Add almond flour, baking powder, pumpkin pie spice, salt, and sweetener to the mug. Stir with a fork until well combined.
- In a small bowl, whisk together the egg, melted butter, pumpkin puree, and vanilla extract until smooth and creamy.
- Pour the wet mixture into the mug with the dry ingredients. Stir vigorously to incorporate everything, scraping the sides and bottom.
- Fold in chocolate chips if using.
- Let the batter rest in the mug for 2 minutes to allow the almond flour to hydrate.
- Microwave on high for 60 seconds. Check the center; if wet, microwave for another 15-30 seconds. The cake should be set on the edges but slightly soft in the center.
- Let the mug cake cool for 2 minutes to firm up before eating.
Notes
Do not overmix the batter to avoid a tough texture. Ensure baking powder is fresh for proper rising. The 2-minute rest before microwaving is crucial for texture. Almond flour is calorie-dense, so practice portion control. This recipe is naturally gluten-free but contains nuts.
