Description

These no-bake keto cheesecake bites are creamy, rich, and satisfying without the sugar crash. Made with macadamia nuts, cream cheese, and sugar-free caramel, they provide healthy fats and protein for sustained energy.


Ingredients

  • 1 cup (115g) raw macadamia nuts
  • 3 tablespoons (42g) unsalted butter, melted
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (60g) powdered confectioners sweetener (erythritol or monk fruit blend)
  • 2 tablespoons (30ml) heavy cream
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) sugar-free caramel sauce
  • Flaky sea salt (such as Maldon)
  • Optional: Sugar-free dark chocolate chips

Instructions

  1. Grind macadamia nuts in a food processor until they resemble coarse sand. Be careful not to over-process into a paste.
  2. Add melted butter to the nuts and pulse until combined. The mixture should hold together when pinched.
  3. Line a 12-cup muffin tin with paper liners. Divide the nut mixture evenly among the cups and press firmly into the bottom and slightly up the sides using the bottom of a measuring cup.
  4. Place the crust-lined tin in the refrigerator to set while making the filling.
  5. In a mixing bowl, beat the softened cream cheese until completely smooth with no lumps.
  6. Add the powdered sweetener, vanilla extract, and heavy cream. Beat on medium-high speed for 2-3 minutes until light, fluffy, and creamy. Scrape down the sides of the bowl.
  7. Gently fold in ¼ cup of the sugar-free caramel sauce to create ribbons throughout the filling.
  8. Divide the cream cheese mixture evenly among the crusts. Drizzle the remaining caramel sauce over the top of each bite.
  9. Sprinkle a tiny pinch of flaky sea salt on each bite.
  10. Freeze for at least 2 hours until firm. Store in an airtight container in the freezer or refrigerator.
  11. Serve cold or frozen for the best texture.
