Low-Carb Cheeseburger Casserole

  • Author: Eden
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A quick, low-carb weeknight dinner that combines the flavors of a classic cheeseburger into a single baked dish. It features ground beef, cheddar cheese, pickles, and bacon, requiring minimal active prep time.

Ingredients

Scale
  • 1.5 pounds ground beef (80/20 fat ratio)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup chopped dill pickles
  • 1 small red onion, finely diced
  • 6 slices bacon, cooked and crumbled
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon yellow mustard
  • 2 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: chopped green onions, extra pickles, fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Heat a large skillet over medium-high heat and brown the ground beef, breaking it up with a spoon. Cook for 8-10 minutes until fully cooked. Drain excess grease if necessary.
  3. Add the diced red onion to the skillet with the beef and cook for 2-3 minutes until softened.
  4. Stir in garlic powder, onion powder, salt, and pepper.
  5. In a large bowl, whisk together eggs, heavy cream, mustard, mayonnaise, and Worcestershire sauce.
  6. Add the beef and onion mixture to the egg mixture and stir to coat.
  7. Fold in half of the shredded cheddar cheese and the chopped pickles.
  8. Pour the mixture into the prepared baking dish and spread evenly.
  9. Top with the remaining cheddar cheese and crumbled bacon.
  10. Bake for 25-30 minutes until the top is golden brown and the center is set.
  11. Let the casserole rest for 5-10 minutes before cutting and serving.

Notes

Do not overcook the beef as it will cook further in the oven. Let the casserole rest for 10 minutes after baking to allow it to set properly. For best results, shred your own cheese to avoid anti-caking agents. This recipe freezes well; cut into squares, wrap tightly, and freeze for up to 3 months.
