Description
A creamy, sun-dried tomato Parmesan chicken dish that is mild enough for picky eaters but rich enough for adults, designed to be easy and fun for kids to help prepare.

- 1.5 lbs boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- Black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- ½ cup low-sodium chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup oil-packed sun-dried tomatoes, chopped
- ¼ teaspoon red pepper flakes (optional)
- 1 pound pasta (penne or fettuccine)
- Fresh basil for garnish
Instructions
- Pat chicken breasts dry and pound slightly if thick. Sprinkle both sides with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
- In the same skillet, reduce heat to medium. Melt butter and add minced garlic, stirring for 30 seconds until fragrant.
- Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 1 minute.
- Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Add sun-dried tomatoes and red pepper flakes. Simmer for 2-3 minutes until sauce thickens slightly.
- Return chicken to the skillet, spooning sauce over the top. Heat through for 1-2 minutes.
- Serve chicken and sauce over cooked pasta. Garnish with fresh basil.
Notes
Grate your own Parmesan cheese to avoid grainy sauce. Keep heat at medium or lower when adding cream to prevent separation. If sauce is too thick, add a splash of pasta water. This recipe does not freeze well due to the dairy content.
