- 8 ounces spaghetti or linguine
- 3 tablespoons extra virgin olive oil
- 6 cloves garlic, minced
- 1 can (14.5 oz) crushed tomatoes
- 1/2 cup low-sodium chicken or vegetable broth
- 1 pound frozen shrimp, peeled and deveined, thawed and patted dry
- 1/2 cup heavy cream
- 2 cups fresh spinach
- 1 lemon (zest and juice)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
Instructions
- Thaw shrimp under cold running water for 5 minutes, pat dry, and season lightly with salt and pepper.
- Heat olive oil in a large deep skillet over medium heat. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant but not brown.
- Pour in crushed tomatoes and broth. Stir to combine and bring to a gentle simmer; cook for 3 minutes.
- Add dry pasta directly to the sauce. Pour in enough water to just cover the pasta. Cook for 8-10 minutes, stirring frequently, until pasta is almost tender.
- Push pasta to the sides and add shrimp to the center. Cook for 2 minutes, then stir in heavy cream.
- Turn off the heat. Toss in fresh spinach, lemon zest, and lemon juice. Stir until spinach wilts.
- Taste and add salt if needed. Serve immediately topped with Parmesan cheese.
Notes
Do not overcook the shrimp; add them only in the last 2 minutes to prevent rubberiness. Use low heat when adding cream to prevent separation. Fresh garlic is preferred over jarred for better flavor. If the sauce gets too thick, add a splash of water or broth.
