Ingredients

  • 8 ounces spaghetti or linguine
  • 3 tablespoons extra virgin olive oil
  • 6 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1 pound frozen shrimp, peeled and deveined, thawed and patted dry
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1 lemon (zest and juice)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Thaw shrimp under cold running water for 5 minutes, pat dry, and season lightly with salt and pepper.
  2. Heat olive oil in a large deep skillet over medium heat. Add minced garlic and red pepper flakes; cook for 1 minute until fragrant but not brown.
  3. Pour in crushed tomatoes and broth. Stir to combine and bring to a gentle simmer; cook for 3 minutes.
  4. Add dry pasta directly to the sauce. Pour in enough water to just cover the pasta. Cook for 8-10 minutes, stirring frequently, until pasta is almost tender.
  5. Push pasta to the sides and add shrimp to the center. Cook for 2 minutes, then stir in heavy cream.
  6. Turn off the heat. Toss in fresh spinach, lemon zest, and lemon juice. Stir until spinach wilts.
  7. Taste and add salt if needed. Serve immediately topped with Parmesan cheese.

Notes

Do not overcook the shrimp; add them only in the last 2 minutes to prevent rubberiness. Use low heat when adding cream to prevent separation. Fresh garlic is preferred over jarred for better flavor. If the sauce gets too thick, add a splash of water or broth.
