  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • For the Topping:
  • 1 cup (240ml) heavy cream, cold
  • 2 tablespoons (20g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • Extra gingersnap crumbs for garnish
  • Mini marshmallows (optional)

Instructions

  1. Prepare the crust: Crush gingersnap cookies into fine crumbs. Mix with melted butter, sugar, and cinnamon. Press firmly into the bottom and slightly up the sides of a 9-inch springform pan.
  2. Whip the cream cheese: In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  3. Add pumpkin and spices: Add pumpkin puree, pumpkin pie spice, vanilla, and salt to the cream cheese mixture. Beat on low speed until just combined.
  4. Whip the heavy cream: In a separate cold bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. Fold together: Gently fold the whipped cream into the pumpkin cheesecake mixture until no white streaks remain.
  6. Chill: Pour filling into the prepared crust, smooth the top, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
  7. Serve: Whip fresh cream for topping, pipe or spoon onto the chilled cheesecake, and garnish with extra gingersnap crumbs and optional mini marshmallows.
